Ingredients
1/4cupwhole wheat pastry flour, or gluten-free baking mix to make gluten-free
1tablespooncoconut sugar, or sweetener of choice to taste
1/4teaspoonbaking powder
1/4teaspoonground cinnamon
1/8teaspoonground dried ginger
pinchground allspice
pinchground cloves
2tablespoonsunsweetened nondairy milkplus
2teaspoonsunsweetened nondairy milk
2tablespoonsgrated carrot
2tablespoonschopped walnuts
1tablespoonraisins, or chopped dates
2teaspoonsmild oil, or use mashed banana or applesauce to make oil-free
Instructions
Oil an oven-safe mug (**use a single serving size nonstick pan to keep it no oil added).
Add the flour, sugar, baking powder, cinnamon, ginger, allspice and salt then mix well
with a fork. It's important to mix well so that the baking powder is evenly distributed.
Next add the milk, carrot, walnuts, raisins, and oil then mix again. Bake at 350 degrees
for 15 minutes. Check with a fork to make sure the middle is cooked. If not, cook 5
minutes more.
Notes
Make it extra special by mixing 1 tablespoon of vegan cream cheese and whip it with 1 tablespoon of powdered sugar to make a cream cheese topping!
