The burgers are fantastic. I was being lazy and ended up over chopping the pumpkin seeds, but it worked just fine. The weather is very hot, so these were baked this morning and then I popped one in the toaster to have for dinner. Topped with a little lettuce, pickle, ketchup and mustard, delicious. I cut the recipe down to make two. After I finish the next one I will have to try the butternut burger.

Very true – there is a video of me making these live in the post and they are not giant 1 – 2 inch pieces, more like 1/2 inch. But also in the directions are ways to correct if the mixture is too dry or too wet, so the measurement doesn’t need to be exact, just close.

Kathy also your chunk sizes- are you talking 1/2″, 1″, 2″, etc.- because ‘chunks’ are in the eye of the beholder! And could affect the mass in a cup.

I would say a guesstimate might be 1 pound of potatoes per 2 cups. I did not weight mine, but the reason I did it in cups is that potato sizes vary so much
