I used homemade date paste instead of brown sugar, stirred in at the end of cooking, along with the extra cinnamon and chopped walnuts. Portioned in pint jars for fridge storage. To the one I ate this morning, I added blueberries, a tablespoon of flax seed meal, and a bit of plant milk. Really delicious. Thank you for the recipe. Next time I might make it with buckwheat or oat groats.

The water will be absorbed upon standing. At least mine did.

Mine didn’t even get to pressure before the burn signal went on, so I released the pressure, stirred the pot again and then tried again. The burn notice went off again before the pot reached starting pressure, so I turned it off and released the steam. I didn’t expect the oatmeal to be cooked, but it was actually perfect. Once stirred, the oats absorbed the water, even though there had been a lot when I was able to remove the lid. I always get burn notices when I make oatmeal, but somehow it always comes out anyway.

I’ve made this twice now, and it comes out perfect! I’m using an 8 quart Costco Instapot, and use 3 minutes. It’s great to make my breakfasts for the entire week! I also love that it uses an entire 15 ounce can of pumpkin. I used the topping on one recipe, and just pure maple syrup on the other. Both are delicious!
