Easy Vegan Slow Cooker Thanksgiving for Two

Bottom Layer (tempeh and gravy) – Veggie Bouillon Powder – tempeh or seitan – flour, reg or gluten-free  Middle Layer (stuffing) – packaged vegan stuffing – cranberries or pecans Top Layer (candied sweet potatoes) – 1 medium sweet potato, cut into thick rounds – 1 tablespoon brown sugar

Please note that this recipe is written for a 1½ to 2 quart slow cooker. (You can double or triple to use a larger slow cooker.)

Step 1

Add the water, Golden Veggie Bouillon Powder, salt, and pepper to the slow cooker and mix. Add the tempeh (or seitan).

Step 2

In a bowl, mix the stuffing ingredients. Transfer the mixture to the middle of a of  piece of parchment and close it up. Place on top of the tempeh.

Step 3

Arrange the sweet potato slices on another oiece of parchment and sprinkle with sugar, cinnamon, and salt. Place it on top of the stuffing packet

Step 4

Cook on low for 7 to 9 hours (or 3 hours on high). Enjoy your day while it cooks.

Plate out all the layers and you have a full plate of vegan Thanksgiving goodness!
