Healthy Slow COoking
This green potato soup is spooky, easy to make, and everyone will love it!
Decorate it with toasted bat cutouts or make a red pepper soup monster!
For the Soup:
– 4 cups potatoes – 3 cups water – 1 vegetable bouillon cube – 3 cloves garlic, – 1 cup washed spinach or kale – 1/4 cup nutritional yeast – 1/4 cup cashews – 5 to 8 drops liquid smoke – salt and pepper, to taste
For Finishing & Serving:
– 4 pieces of pumpernickel bread cut into Halloween shapes – red bell pepper to cut into tentacles and a monster head.
Step 1:
Add the potatoes, water, bouillon and garlic to a soup pot. Simmer until the potatoes are easily pierced with a fork, about 10 minutes.
Step 2:
Blend the spinach mixture until very smooth. Mash the potatoes, then stir in the green mixture until completely incorporated.
Garnish with pumpernickel Halloween toasts...
... or cut out a monster from a bell pepper!
