Gluten-free Apple Teff Pancakes With Caramel Date Syrup

You can just serve these delicious pancakes with regular maple syrup if you want. But I love making the easy date syrup because there's no refined sugar and it makes it taste like a caramel apple.

– nondairy milk – flax mixed with 1/4 cup warm water – mild oil, optional – date syrup or maple syrup – vanilla extract – minced fresh apple

Wet Ingredients

– teff flour – baking powder –cinnamon – salt

Dry Ingredients

Step 1

Add the nondairy milk, flax mixture, oil (if using), sweetener of choice, vanilla to a mixing bowl and mix well. Then stir in the minced apple.

Step 2

Mix the Maskal Ivory Teff Flour, baking powder, cinnamon, and salt in a separate medium-sized mixing bowl.

Step 3

Add the wet mixture to the dry and mix well. The batter mixture will be thick, but you can thin it by stirring in some extra water a tablespoon at a time as you need it.

Step 4

Scoop a heaping ¼ cup of batter and spread in a thick circle and cook. Repeat until all the batter is cooked.

Step 5

Serve topped with Date Caramel Syrup or maple syrup if you prefer.

Make the date syrup

Add the dates and water into a small saucepan and bring to a boil and simmer for 5 minutes. Blend until smooth
