I added a little applesauce to make it easier to stay together. I also ground my teff into flour.

What can I substitute for the coconut oil? If I have to use oil, I want to use a healthier oil, like EVOO.

My partner and I love teff flour, and recently bought a 25 lb bag of Maskal Teff flour. Hehe
This recipe is what I have been looking for, as it doesn’t contain almond butter, like most vegan teff cookie recipes online.
Thank you

I’m gluten-free, but also allergic to almonds, so it’s always exciting for me when a GF recipe doesn’t include almond flour!

I think it depends on the type of baked good. I’ve had successes with brownies, cookies, and gingerbread. But to do a yeast roll I added a few other ingredients.

Can teff flour be used equally as a flour substitute or are other ingredients needed? Thanks and your new book is on my Christmas wish list!

I will measure the weight the next time i use it. I would say fluff it and don’t pack it down.

Any thoughts on the weight of the teff flour? I have only teff grain and was going to grind, and I’m a little unsure ….should i pack my resulting flour down, or fluff it ? A weight would be most helpful 🙂
